Emma’s Journey at the Edinburgh School of Food and Wine

EmmaOur oldest daughter Emma has had a passion for food for as long as we can remember, that’s no surprise as her mums a passionate cook as you know. Emma took it a little more seriously though and has been pursuing her career as a Chef and over this past 2 1/2 yrs she has worked with many of the top Chefs in Dundee and Angus already accumulating great experience but has always wanted to attend the Edinburgh School of Food and Wine (ESFW).

On January 6th, 2018 Emma started an intensive full time, fast-paced Diploma in Food & Wine at the ESFW in Newliston. She has had a most challenging and extremely rewarding experience so far, honing her existing skills and learning so many more exciting and technical techniques and recipes to take with her. From catering weddings and corporate events to working full time as an intern in 4star hotels, commercial awareness, menu design/planning, cooking for allergies and special diets and also some venture into Wine pairing and food writing, phew!

It’s now all eyes on her final exam scheduled for June 2018 where she will design and prepare a 5-course tasting menu for a panel of 12 harsh critics (including us ☺), good luck Emma!

Emma’s plan has always been to own her own restaurant one day and what better place to start than in our family Café!

After graduation in June 2018 Emma will make her way back to Exchange Street, in Dundee, where she has already started working with us on our future menu, exciting new and improved recipes will be finding their way to our customers plates where Emma will be showing off her new skills to everyone’s delight, we are excited, so should you be!
